Two River Riesling 2023
Aromas of lime, honeysuckle and nougat are mixed with slightly spicy and savoury cashew nut notes. This super textural Riesling offers lovely weight with an elegant finish, offering a hint of sweetness that lingers without being cloying.
Fruit came from the Hawkesbury vineyard in the Southern Valleys, characterised by clay loam soils over river gravels, and which contributed to the wine's distinctive minerality and depth. Grapes were hand-harvested early in the morning, and fermentation conducted at cold temperatures in stainless steel tanks to retain aromatics and purity. The fermentation was intentionally stopped when the desired balance between sweetness and acidity was achieved. Post-fermentation, the wine rested on fine lees for 3 months.
