Mahi Sauvignon Blanc 2023
This wine shows an array of fruitcharacters, ranging from citrusthrough to tropical notes. The palate has an elegant structure with a creamy, textural mouthfeel.
The grapes were sourced from five distinct vineyards across Marlborough. The hand-picked fruit underwent whole-bunch pressing to minimise skin contact. 19% of the juice was fermented in seasoned French barriques. The remaining juice was fermented at cool temperatures to retain the distinct fruit characters from each vineyard. 35% of the fermentations utilised natural yeasts. Post-fermentation, the wine rested on its lees. The final blend is composed solely of free-run juice.
