Mahi Pinot Gris 2023
Lovely balance of sweetness and acidity with a creamy, textural mouthfeel and smooth, floral finish.
The single vineyard fruit was machine-harvested from to bins, minimising maceration and then underwent gentle pressing to extract high-quality juice while minimizing phenolic extraction. A portion of the juice was fermented in older French oak barrels to add weight and complexity. The remaining juice was fermented at cool temperatures in stainless steel tanks. Post-fermentation, the wine rested on its lees, and the final blend was made solely from free-run juice.
